Guntha Ponganalu – Dosa Muffins

This is an evening snack or an early morning breakfast. Typically they are called ponganalu and i call them Dosa muffins since they are made from dosa batter.

Soak white rice and urad dal and blend the mixture finely to a semi liquid batter, ferment the mixture overnight. Add finely chopped onions, green chillies, curry leaves, salt, cilantro, turmeric and tomatoes.

Pour the batter into the cast iron muffin holes pan and turn them after they are done on one side.

Serve while hot with ginger (allam) or any of your favorite chutney and they taste deli.cious and yummy for tummy.

Kodi Guddu Dosa

Making a  dosa (a.k.a crapes) is quite common in southern India and my hubby’s THE most favorite breakfast. He taught me how to make an egg dosa and one fine weekend i decided to surprise him with a plate full of egg dosa’s by the time he got out of bed.

Soak white rice and urad dal and blend the mixture finely to a semi liquid batter, ferment the mixture overnight. Have the batter and eggs ready.

Heat a pan and pour the batter, beat the egg and spread it over the batter, add any kind of spicy powder to taste (i added powder made from garlic, coconut, red chillies and roasted channa dal) and some cilantro, ghee to taste.

As i was preparing the breakfast, my hubby woke up and came into the kitchen as he smelled his favorite Egg Dosa’s.

A small tip ==> if you want your dosa’s to be crispy and reddish brown add very few fenugreek seeds or puffed rice or regular cooked white rice to the blending mixture before fermentation !

My Valentine

I wanted to make something very special this valentine’s day for the love of my life – my dearest ” Hubby “.

Everyday seems so special when love is in air but this time I wanted to show how special it is to me. I always wanted to try Quilling and so started off with it. Since, i was making it for valentine’s day i wanted to make something in a shape of a heart  (wasn’t sure what to make) and so i drew a heart shape on an unused envelope and then cut it to the desired shape.

Selected a few color papers and then made strips out of the paper.

I used a tooth pick to rotate around the paper strip and glued the ends. Tried to make different shapes by pressing around at different points to get desired shapes.

Rolled over the glue stick on the heart and started to place or fill the space accordingly trying to coordinate the colors and filled it around. Just tried to use my imagination of colors and shapes and went on n on.

After the heart was filled wanted to make it little more decorative, so added a few hanging strings with the heart in the end. This is how the end product looked like. It just looked perfect like a love wreath and so is a valentine wreath !!

You can use it as a hanging for a light fixture too..

She Sells Sea Shells at the Sea Shore

Today I would like to share an interesting DIY project that’s been long decorating my window. Collectibles are always special and stay close to heart.

Every time we visit a place we buy a souvenir for the trip. After trip to a beach, an idea struck , why don’t we make our own souvenirs for the trip? I have this collection from Pacific ocean to Atlantic ocean including small beaches around. All we did to make them is collect some fine sand, sea shells, pebbles or small stones and that’s it we are ready to make one…

What do you usually do with candle jars after they have been used up? Here is a way to use them- Take one such fancy empty candle jar or a glass. First, fill it up with some fine sand from the beach, add shells to the corners of the glass,and some pebbles over it. To recollect I also place a small placard with the location and year inside the jar.

I also use these DIYs as a coffee table decor by placing a candle in the shells.

So, that is how we ended up filling our kitchen window with souvenirs from different places and they have now become a new addition to our home sweet home (HSH). Hope you guys would like it and try doing one for yourself and if so please do share the experience of making one.

Colored Bulbs Wreath

Happy Holidays !!

Wall or door or any type of hanging decoration can be made in so many different ways using a variety of holiday decorative material. This year we decided to make a Happy Holidays wreath for our front door hanging decor, using colored Xmas bulbs.

Used different colored Xmas bulbs, Styrofoam board, glue, ribbon banner and tiny colored wrapped gift  boxes.

Cut Styrofoam board into a circular piece and rolled the ribbon banner around it.

Started attaching the colored bulbs one by one with glue, covering the whole circular shape to make a colorful bulb wreath.

Finally glued the tiny gift boxes to the ribbon banner and hung them from the top of the wreath.

It came out to be looking bright and colorful….

Tri-Color Rotini Pasta

Pasta is all about the right kind of seasoning..

Brought some tri-color rotini pasta and marinara sauce from a local store.

Added water to a sauce pan and some salt, to it added olive oil, carrots, pasta and boiled until they were cooked.

Simultaneously sautéed onions, carrots, olives and cherry tomatoes along with basil, oregano, rosemary and olive oil. Once they were half-cooked, added some marinara sauce and sautéed for a little longer.

Strained the pasta in a colander once it was cooked.

In a baking bowl, poured a layer of cooked pasta then cooked vegetables then marinara sauce then some cheese. Repeated the process with these layers and topped of with lots of cheese at the end.

Placed the pasta into the oven @ 350 degrees for about 15 minutes.

Tri-color pasta served on a plate and yummy to go into the tummy.

Dandelion Wall Art

On a regular shopping weekend when we walked into a local arts and crafts store, the Dandelion wall art  caught our attention and immediately was placed in our DIY project list.  The piece in the store was made with sea shells. We came up with the idea of using colored stones. The wall art is so simple and yet brings elegance to any room you place it in.

On a weekend while trying to get to the creative side of life from the monotonous routine, we decided to make the dandelion wall art. We bought two equal sized rectangular canvas frames..

two bottles of folk art antique metallic copper and one french vanilla acrylic paint, colored stones and glue.

Brushed thick strokes of metallic copper color paint on both the canvas frames and set aside to dry for an hour.

After the canvases were completely dry, made thin strokes of the dandelion stems and branches overlapping into the next frame with the french vanilla color paint.

The colored stones were then glued to the tips of the branches synchronizing the whole art.

As said earlier it is very simple & easy to make and the final completed Dandelion Wall Art was ready to go on to the wall in just less than 2-3 hrs in our Home Sweet Home (HSH).

Lamb-Hogget-Mutton Biryani

Iron rich food – lamb, lamb and more lamb !!

Give Thanks ! Thanksgiving is finally here. Wanted to make some delicious, healthy and vitamin rich entrée..

Washed pieces of lamb with salt and turmeric under tap water. Marinated the pieces by adding cloves, cardamom, cinnamon sticks, ginger, garlic, turmeric, red chilli powder and coconut powder.

Chopped onions, green chillies and sauteed with potatoes and mushrooms. Added biryani leaves and tomato to it and sauteed for a little longer.

Dumped the lamb pieces into the mixture and added water and salt and covered the pressure cooker until the mixture was thoroughly cooked. Once finished sprinkled the curry with freshly chopped coriander leaves.

Sauteed finely chopped sweet onions.

While the lamb was being cooked, washed basmati rice and cooked it until the rice was 3/4th done. Also in a small cup took some warm milk and added red/yellow color to it.

Took a baking tray and placed a layer of rice at the bottom and dripped colored milk randomly on the rice layer. Put a layer of the cooked lamb-mushroom-potatoes on that layer. Again added a layer of rice, colored milk and cooked lamb-mushroom-potatoes. Repeated the process until the tray was full. Finally topped it off with sauteed sweet onions. Covered the tray with an aluminum foil and placed in the oven for about 15 minutes @ 375 degrees.

Yummy lamb biryani was ready to be served hot & spicy and mouth watering.

Hall-Orange-Ween

It’s that time of the year many households in the U.S of A turn orangish in color inside and out and pumpkin is the favorite fruit for all, be it for decoration or to make pies and delicious recepies. We carved our Mr.Pumpkin, picked up a couple of weeks ago on our Oktober Adventures apple and pumpkin picking road trip in the Hudson region.

Selected the right size with a picture in mind about to how to carve his face.

After that made a cut on the top, scooped out the seeds inside and leveled it around.

Drew the eyes, nose and mouth and made cuts along the lines to finally carve him out to be Mr. Pumpkin.
